Since this past week featured both National Margarita Day and National Tortilla Chip Day, it seemed appropriate to have Mexican food over the weekend. The most appropriate way to have it, of course, would be to go to a good Mexican restaurant and have it prepared by people who know how to cook Mexican food. That just seemed too easy, though.
While our Mexican food cooking skills may be questionable, the guacamole in this house is first rate! For years I thought of it as an indulgence but finally realized that only the fact that it's generally eaten along with a giant bag of chips is the problem. Guacamole is actually incredibly healthy but because we tend to avoid the chips, we also avoid the dip.
Ingredients
2 Ripe avocados
2 Tomatoes, diced
1/2 Red onion, peeled and diced
2 Tablespoons lemon juice
1/4 Cup fresh cilantro, chopped
Salt & pepper to taste
I do love Tex mex food and always have to have this with the meal. My mom is the only person I know that does not like guacamole! Not surprising that you made the same meal the next night, wish I had been there-I am sure it was a delicious feast. Thanks for sharing this recipe.

Isn't fresh guacamole just the best? I can't stand it when people buy the pre-made stuff. It just doesn't compare. I wish that more people realized just how tasty the fresh stuff is.

ReplyDeleteThanks, Renee! I don't actually like heat so I leave it out. But some chopped jalapenos or even a touch of cayenne pepper would certainly be appropriate.
