Here's another delicious variation for preparing the versatile wheat berries. This one is more robust and tangy for the addition of lemon juice and feta cheese.
Ingredients
1 Cup wheat berries
1 1/2 Cups water
12 Cherry tomatoes, halved or quartered
1 1/2 Cups water
12 Cherry tomatoes, halved or quartered
1/4 Cup scallions, chopped
2 Tablespoons parsley, chopped
1/4 Cup low-fat feta cheese, crumbled
1/4 Cup low-fat feta cheese, crumbled
Dressing
2 Tablespoons olive oil
1 Tablespoon lemon juice
1/4 Teaspoon mustard
Salt and pepper to taste
Bring the water to a boil in a pot, add the wheat berries, cover and lower the heat. Cook on low flame for approximately one hour or until the wheat berries are tender and the water has been absorbed. Let cool and add the tomatoes and fresh herbs. Whisk together the dressing and add to the salad. Toss in the crumbled cheese and serve at room temperature. Makes approximately four servings.
