Key Lime Martini

Key Lime Martini

On a recent vacation in Mystic, CT we dined at the highly lauded S & P Oyster Company and had a delightful Key Lime Martini while we waited for our table. Of course we had to try the recipe at home! None of the recipes we found online were exactly identical to the one the bartenders at S & P made but we're going with their wonderful version. It's sweet, sour, refreshing, deceptively powerful and lip-smacking delicious. Cheers!

Per Serving:
1 1/3 oz Vanilla vodka *
1 oz. Rum
1 oz. Midori
1 oz. Lime juice
1 oz. Pineapple juice
1 Teaspoon simple syrup

Shake over ice and serve in a cocktail glass garnished with a wedge of lime. Note that we keep most of our cocktail ingredients and glasses either frozen or refrigerated so very little ice melts. In fact, with so much fruit juice in the drink, you may want to forgo shaking it at all and simply freeze it for about 30 minutes for a more potent drink.

* We've tried this with both regular and the vanilla vodka that S&P used and the vanilla version is a bit smoother. If you don't have vanilla vodka, it's fine to use plain or you can add 1/8 teaspoon of vanilla extract to the drink for that little vanilla kick.

  7. OK, totally did this one tonight! My husband was a "little" disappointed that he didn't get any of the daiquiri last night, lol, so I made him a martini tonight! Thanks again for the recipes!!
