When I was growing up, my mother frequently served wonderful lima beans and I've loved them ever since. She rightly believed that adding sautéed onions to foods usually made them taste good and I often follow that philosophy and prepare the beans much as my mother did.
I happen to think that lima beans, also known as butter beans, taste just fine on their own but the simple addition of the sautéed onions, a bit of olive oil and plenty of fresh black pepper turns them into something sublime. Served as a side dish or a snack, they're incredibly nutritious and absolutely delicious. Enjoy!
Ingredients
2 Cups lima beans
1 Onion, diced
2 Tablespoons olive oil
Handful of fresh dill
Salt and pepper to taste
I haven't had lima beans in 20 years (REALLY REALLY didn't like them).
ReplyDeleteBut I just got some in my weekly CSA, so I might have to give your recipe a go.
Wow this takes me back. I haven't had lima beans since Sunday dinners at my grandmothers house.
ReplyDeleteI'm a sucker for a simple recipe, and for food memory induced recipes.
