Lima Beans with Sautéed Onions

Lima Beans with Sautéed Onions

When I was growing up, my mother frequently served wonderful lima beans and I've loved them ever since. She rightly believed that adding sautéed onions to foods usually made them taste good and I often follow that philosophy and prepare the beans much as my mother did.

Lima Beans with Sautéed Onions
I happen to think that lima beans, also known as butter beans, taste just fine on their own but the simple addition of the sautéed onions, a bit of olive oil and plenty of fresh black pepper turns them into something sublime. Served as a side dish or a snack, they're incredibly nutritious and absolutely delicious. Enjoy!

Ingredients
2 Cups lima beans
1 Onion, diced
2 Tablespoons olive oil
Handful of fresh dill
Salt and pepper to taste

Cook the lima beans in boiling salted water until they are tender then drain. Sauté the onion in one tablespoon of the olive oil until translucent. Add the sautéed onion to the cooked lima beans along with the remaining tablespoon of olive oil and chopped dill. Season and serve warm. Makes about four servings.

  1. I haven't had lima beans in 20 years (REALLY REALLY didn't like them).
But I just got some in my weekly CSA, so I might have to give your recipe a go.
