Mashed potatoes, again? Sure, we all love them. Especially when they're laden with lots of artery blocking butter and cream. Or, my personal favorite, gobs of yummy gravy. But still, they can get kind of boring. How about sprucing them up once in a while by pairing them with their sweet and nutritious cousins?
Ingredients
2 White potatoes
1 Sweet potato
2 Tablespoons light butter
3/4 Cup low fat milk
1/2 Teaspoon smoked paprika
2 Tablespoons fresh chives or scallions, chopped
Salt and pepper to taste
Peel and cut the white and sweet potatoes into chunks. Boil in salted water until fork tender and drain. Place the potatoes back in the pot and add the butter. Combine the milk and smoked paprika and add to the potatoes. Add the herbs, mix together until well combined and season to taste. Makes approximately 4 servings.
This is a great, great, great idea. Naturally, we agree that one can't get enough mashed potatoes, but variety is the spice of life, right? And why not sneak a little nutrition in, too!

ReplyDeleteWow looks like flavor fun!!! Quick question though. Are you using the real "white sweet potato" or its orange cousin, the yam. I'm assuming the white one and the beautiful color is from the smokey paprika.
ReplyDeleteHi Carmen, I'm glad you like the recipe. In this photo I've used 2 white Idaho baking potatoes and 1 orange "jeweled" yam. The paprika lends a bit of color but most of it does come from the orange spud.
