Easy BBQ Pulled Chicken
In general, I'm a make-it- from- scratch kind of cook. No, I'm not churning my own butter and I've been known to reach for a package of frozen spinach, but I usually prefer homemade to store bought and am willing to put in some extra effort. There have been plenty of Sundays when I've roasted a chicken, complete with stuffing and veggies. The leftovers make great sandwiches and chicken salads. But, then again, sometimes that much effort just seems like a deal breaker.
So my guilty secret is that sometimes, on a weeknight, I'll stop at the store for a rotisserie chicken. Those birds are so tasty! I add a salad, some crusty bread and I have a quick, easy weeknight meal. And...the leftovers make great sandwiches and chicken salads...not to mention some tasty doggie treats. But I'm resolved that instead of continuing to feel guilty about my "shortcut" chicken, I've going to embrace the expertly prepared rotisserie birds and turn them into something even more special.
Ingredients
1 Rotisserie chicken
1 Onion, diced
1 Clove garlic, minced
1 Tablespoon olive oil
2/3 Cup BBQ sauce (homemade or your favorite store bought)
1/3 Cup water
Add the olive oil and diced onion to a large pan and saute until the onions are translucent. Add the minced garlic and continue sauteing for another minute until the garlic softens.
Remove the skin from the chicken and pull the meat apart with two forks. Add the chicken meat to the pan. In a small bowl, mix the BBQ sauce and water together. You can alter the ratio to suit your taste but I find that, without the water, the flavor of the sauce masks the flavor of the chicken and aromatics. Pour the sauce into the pan and toss to coat the chicken. Cook on a low flame until everything is heated through and serve on toasted rolls. Makes approximately 6 servings depending on the size of the chicken.

Pulled chicken!? God bless you for even knowing you can do that for BBQ. I swear any BBQ place that I go to that actually HAS bbq chicken is a-ok on my list. One of my absolute favorites since I was a little girl

ReplyDeleteThat meal doesn’t even look like it was made with leftovers! There isn’t a trace of leftover chicken with the way you presented it expertly. It looks so delicious, that you could probably serve it as a meal in itself. Thanks for sharing this trick with us!

One more way to take the guilt out of using the rotisserie chicken is to freeze the carcass and once you have a few of them saved up, make homemade chicken broth. I usualy use 3 or 4, and toss them in the slowcooker with veggies and aromatics and use the broth for soups and gravies.
