Pumpkin Pie Smoothie
I know many people like their smoothies for breakfast but, in the mornings, I'm a quick bowl of high fiber cereal kind of person. The afternoons, though, are my ideal time for this treat because it gives me natural energy and keeps me full till dinner. Oh, and it's completely delicious...and skinny as well!
Do you keep peeled bananas in your freezer? If you don't then go do that right now because they're great for thickening shakes and smoothies. I'm assuming you've fallen in love with Greek yogurt and have a supply in the fridge. My preference is for Fage Total 0 and they're not even paying me to say so (but I'd be happy to accept a bunch of money or even just some samples if they happen to be reading this!) Have you cleaned your local store out of canned pumpkin puree? Um, seriously, you need to go do that because there's lots more pumpkin deliciousness coming soon and you're going to want to make some of it.
And if you need any more convincing, keep in mind that a 1/2 cup of the orange stuff is only 40 calories but provides 5 grams of fiber and 300% of your daily vitamin A needs. I'm thinking of adding it to my morning cereal! So now you're all set to make these lip smacking good smoothies. Oh, if you don't have pumpkin pie spice, just add more cinnamon and it'll be fine. Enjoy!
Ingredients
1/2 Cup Greek style yogurt (I used fat free)
1/2 Cup pumpkin puree (not pumpkin pie filling)
1/2 Cup milk (I used fat free)
1 Banana, frozen
1 Tablespoon simple syrup or other sweetener
1 Teaspoon cinnamon
1/2 Teaspoon pumpkin pie spice
Dash of salt
Combine all the ingredients in a blender and puree until completely smooth. Garnish with an additional sprinkling of cinnamon and a cinnamon stick, if desired.

ReplyDeleteI DO keep bananas in the freezer, mostly because they are cheap, I can't use them all before it's too late, and Mr. Picky-eater loves them. I can't believe 1/2 a cup is only 40 calories. I really must try this soon!

DeleteIn this particular smoothie, I don't taste the banana. It's there to add body and some sweetness. If you want to leave it out you will have a slightly thinner smoothie although the pumpkin does add body. You might try adding a couple of ice cubes to the blender and you may need a touch more simple syrup or other sweetener but it should still be fine. Let me know how it goes.
Now I can comment and let you know that I've been drooling over this since I saw it yesterday. Did you hear that? That's my stomach growling...

ReplyDeleteThis looks really delicious! I'm still on the fence about Greek yogurt (it tends to be too bitter for me), but I think the pumpkin would mask the bitterness. I'm definitely going to give this a try!
ReplyDeleteOK ... I ran this through my MasterCook program for the calorie count. If I assume 4 servings, I get 72 calories. Still pretty low, but not 40. How did you calculate your calories??
ReplyDeleteHi Joan, if you take a look at the paragraph in question you'll see that I am referencing the amount of calories in a half cup of unsweetened pumpkin puree, not the actual smoothie.
