Broccoli and Slaw Salad (aka Resolution Salad)
Welcome to 2013 which is going to be very good year filled with all kinds of wonderful things that you will make happen by keeping all your resolutions. What do you mean you've already broken your resolutions? I personally, give myself all of January to begin working on my resolutions so there's still plenty of time. But unless you're one of these naturally thin people who never gain any weight no matter what they eat (please go away), I'm assuming that one of your resolutions is to lose some weight...or at least lose the weight you gained over the holidays...or maybe just not gain any more weight. Whatever works for you.
I admit that I had a few cookies and a few cocktails around the holidays. And some pie. And there were those chocolates that guests brought over. Hmm. OK, it's possible I may have gained a pound or two, nothing serious, I'll have them off in no time. Let me just go dig in the back of the closet to find the scale. Wow, that's a lot of dust on there. Anyway, I'll just step on here and see whether it's one pound or two................................................................................................................................................................................................................................................................................................................................................ Sorry, I took so long. I had to go put the scale out with the trash because it's clearly broken. Probably too much dust in the works because there's absolutely no way that I gained that much weight. For example, my pants aren't that tight. See here, I'm looking at the tag on those pants...hmm...100% spandex......oh.
Did you say you were in the mood for some salad? Me, too!
Ingredients
1 Cup broccoli florets
2 Cups shredded cabbage or cole slaw mix
1/4 Red onion, chopped
1/4 Cup chopped or slivered almonds
1/4 Cup raisins (optional)
Dressing:
1/4 Cup low fat mayonnaise
1/4 Cup low fat buttermilk
2 Teaspoons lemon juice
1 Teaspoon sugar
Salt & pepper to taste
In a large bowl, combine the broccoli, cabbage and red onion. Whisk together the dressing ingredients in a separate bowl and pour over the vegetables. Toss in the almonds and raisins, if using, and fold to combine. Allow to sit for approximately 15 minutes at room temperature for the flavors to meld. Makes 2 servings.

This is similar to one of my wife's favorite salads! She'd love for me to make it at home, and now I can!

ReplyDeletehehe, this is the reason I don't even own a scale, they all LIE! I will be trying this salad, not because I need to eat more salad so I can wear all my clothes but because I love cabbage! And broccoli and red onion. Yes, I really do! Don't know why I never thought to put them all together.

ReplyDeleteAnother good ingredient in a broccoli salad is sunflower seeds. And, you can swap out the raisins for those dried cranberries - Craisins. You can probably tell, Broccoli salad is a favorite in my house. I'll have to try this version.

ReplyDeleteBack to reality where calories count! Womp, womp! I don't regret all my little snacks and drinks. However, I will tell you I am favoring leggings a lot more these days! This salad looks refreshing and renewing. Thank God I have broccoli in the fridge now.
