Lime in the Coconut Martini
I'm thinking it might be time for some kind of intervention. Brian has apparently developed a condition whereby it is impossible for him to walk into any kind of liquor store without "discovering" some new Pinnacle flavored vodka for us to try. He also insists that all vodka be stored in the freezer and we are WAY over capacity in there. I'm not too keen on frozen food but there are a few things that do belong in there other than bottles of vodka, ice cube trays and cocktail glasses. I nearly created an avalanche the other day trying to retrieve a package of frozen spinach!
But, you didn't come here to listen to my domestic problems. The latest "discovery" was a bottle of coconut vodka and, my freezer storage issues aside, it is really, really good. Pinnacle did a great job with this flavor and no, they are still not paying me to create recipes. And why aren't they, anyway, huh?? Hey, Pinnacle people, I make really good cocktail recipes! Anyway...this one is simple and sweet and tropical and everything you'd want in a spring/summer cocktail. Cheers!
Per Serving:
1 1/2 oz. Pinnacle Coconut Vodka
3/4 oz. Pineapple juice
1/2 oz. Coconut cream (we used Coco Lopez)
1 Teaspoon lime juice
Combine all the ingredients in a cocktail shaker. Fill with ice, shake well and pour into a chilled cocktail glass.

ReplyDeleteA true taste of the tropics! How fun to try all those new vodkas. They sell wine refrigerators now you just need to find a vodka freezer.

ReplyDeleteI've seen friends store their vodka in the freezer and often wonder why. That's funny that you almost created an avalanche of vodka and glasses. I can picture it now. This drink looks totally amazing. I have a friend who loves martinis. I'll be sure and pass this recipe along.
