Chocolate Chip Bread
Do you ever find that you get into food moods? Every once in a while I definitely do and, lately, I've been in the mood for chocolate chips. Snacking on them, baking with them, etc. What's odd is that there is usually a bag of them in my freezer but it's only Brian that snacks on them. Most of the time I'm content to let them be but, these days, they seem to be calling to me.
So I decided to bake a dessert that had chocolate chips inside as well as sprinkled over the top for a little extra "something." Quick breads are so easy to put together and it was the perfect vehicle for the double hit of chocolate chips that I envisioned. The result was so moist, with just the right amount of chocolate, and the topping I had in mind came out exactly as planned. I also really wanted a chocolate chip that I loved eating on its own and for me that means milk chocolate. I prefer the chips made by Guittard because they're larger than average and have a more natural taste but that's personal taste, of course. Whatever your chip of choice, this recipe is definitely going into my 'make again soon' pile. Enjoy!
Ingredients
2 Cups all purpose flour
1 Teaspoon baking powder
1/2 Teaspoon salt
1 Stick unsalted butter
1 Cup sugar plus 1 tablespoon
1 Egg
1 Cup milk
1 Teaspoon vanilla
1 Cup chocolate chips plus 2 tablespoons
In a large bowl, beat together the butter, cup of sugar, egg and vanilla until smooth. In a separate bowl, combine the flour, baking powder and salt. Alternate adding the flour mixture and the milk into the batter just until combined. Fold in the cup of chocolate chips.
Pour the batter into a buttered and floured loaf pan. Combine the extra tablespoon of sugar and the extra 2 tablespoons of chocolate chips and sprinkle over the top of the batter. Bake in a pre-heated 350 degree oven for 50 - 55 minutes, or until a cake tester comes out clean. Makes approximately 10 servings.

ReplyDeleteMy 3 year old asked me this morning to make him a cake like I took my brother's house this weekend. I had made blueberry banana bread. Knowing my son, I reminded him what it was that I had made and asked him if that's really what he wanted. He said yes but without the blueberries.

Just made this with dark chocolate chips (and substituting baking soda and lemon juice for the baking powder I didn't have) and it's delicious! Perfect for a cold snowy day like today!

ReplyDeletethis was an awesome recipe! so fast and easy, we love it, it's my new favorite quickbread! we like less sugar so i only used 2/3 of a cup and it's amazing. the sprinkling of the sugar became crunchy and solidified, it's so good. i cooked it for 60 minutes

I made one and LOVED it but spent the day thinking about how I might be able to change it up a bit and make it even better! ReplyDeleteCould I substitute the butter with sour cream? Or perhaps coconut oil?
ReplyDeleteYou definitely could not replace the butter with sour cream. You can use coconut oil although it will alter the flavor a bit. The recipe calls for 1 stick of butter which would be 4 oz. Therefore, use 4 oz. of coconut oil. Also note that butter is actually 80% fat and 20% water whereas coconut oil is 100% fat. Nothing terrible would happen if you used it like that but it might make the bread a little too soft because of the extra fat. If you want to avoid that, I would switch out a bit of oil for water. I'm curious why you don't want to use butter?
DeleteI've done this recipe with coconut oil instead of butter, and it's very good. I had to add a bit of baking time to get the middle fully baked, but I'm not sure that it had anything to do with the coconut oil.
Delete(I've made this one a few times, and the last time I subbed coconut oil, it was just because I was making the bread in a hurry to take to an event and didn't feel like softening butter when I already had soft coconut oil in my cabinet, ha. The flavor is slightly different, but still delightful. I've also done a partial sub with half coconut oil and half butter.)

ReplyDeleteI generally like to bake with semi-sweet chocolate so that is what I used here. But dark would also work if you like a less sweet chocolate.
DeleteI have made this bread many times and it’s amazing. I’ve also taken out the chocolate chips and added brown sugar and cinnamon in the middle of the batter and on top to make like a coffee cake. It’s amazing. Thanks so much for the recipe.
