Portable Chocolate and Peanut Butter Pots
Well, hello there, you little resolution breaker, you. Little pot of chocolaty, peanut buttery wonderfulness that you are. I don't know if you taste as good as skinny feels but it's damn close, I tell you. Damn close. But, no worries about that because this little pot of love is for you to give away to someone you love, or like, or need a favor from, whatever. Of course, it's important to love yourself, too, so you might want to make an extra one and stash it away somewhere in the back of the fridge for those chocolate and peanut butter craving emergencies. I will not judge you.
This pot of happiness came about recently when I removed my jar of peanut butter from the freezer (where I stash it so I'll keep my hands off of it) because I needed a couple of tablespoons for a recipe I was trying. And, since it was already defrosted and all and Valentine's Day is coming up soon (a month away is soon, right?), I thought I should make something with it before I abandoned all willpower and went to get a big spoon. Over the holidays I made our very favorite no-bake creamy cheesecake and this recipe is a play on that one. So, so, so good and so easy to make. Maybe a little too easy to make. Where's my spoon?? Enjoy!
Ingredients
4 Plain butter cookies
2 oz. Cream cheese, at room temperature
2 oz. Prepared whipped topping
2 Tablespoons sugar
2 Tablespoons milk
1/4 Cup peanut butter
1/4 Cup chocolate chips, chopped
Pinch of sea salt
Break up two of the cookies into small pieces and put one at the bottom of each of two 8 oz. jars. Combine the cream cheese, sugar, whipped topping and milk until the sugar is thoroughly dissolved. Mix in the peanut butter and add as much sea salt as you like. Spoon a quarter of the mixture into each jar. Break up the remaining two cookies and place them over the mixture in each jar. Sprinkle a quarter of the chopped chocolate chips into each jar and top with the remaining peanut butter mixture. Sprinkle the remaining chocolate chips over each pot. This recipe should be enough to make 2 pots - one for you and one for your love.

ReplyDeleteThese may be portable but if you ate too much of this you would soon be stationary....what a way to go, tho. I would love to have this on a snow day....yum!
