OK, I'm officially too hot. After the horrible, never-ending winter we had I definitely was prepared to tolerate heat and I'm still not really complaining. But daily heat index readings over 100 degrees are making me come kind of close to complaining. Just slap me next February, OK? Drinks! We need drinks. Tall, icy cool drinks.
Fresh fruit makes the best base for summer cocktails and the strawberries are at peak season. I walked past them at the farmer's market and their aroma was intoxicating. A perfect base for a tall cool gin cocktail.
I've also been making batches of sugar free simple syrup using Sweet N Low and keeping them in handy jars in my fridge. With this zero calorie sweetener, I can make the drinks as sweet as I want without adding calories. So, that means my friend and I can have a whole pitcher of drinks! Cheers!

Ingredients (4 Servings)
- 6 oz. Gin
- 1 lb. Strawberries
- 2 oz. Lime juice
- Skinny syrup
- 8 oz. Club soda
- Skinny Syrup
- 1/4 Cup water
- 6 Packets Sweet N Low
Instructions
To make the syrup, add the sweetener and water to a pot and bring to a boil. Remove from the heat and stir to dissolve the sweetener. Allow to cool for a few minutes.
Make the drink by adding the strawberries to a pitcher along with the syrup. Muddle together using a cocktail muddler or the back of a wooden spoon. Add the gin, lime juice and club soda. Fill with ice and stir.
