Is it wrong that the Halloween candy is already out in some stores? YES. It's totally wrong. Stop it right now! I don't want to see pumpkin shaped chocolate covered marshmallows (even though I will be eating them by the gross in October). I want to see peaches. I don't want fall clothes and boots, I want t-shirts and back yard BBQ's. OK, I'll stop raging.
Regardless of what some retailers have decided to do, I know what I'm doing and it involves enjoying every last bit of August, of lemonade and grilling and summer fruit. And since it's still quite hot out (those chocolate pumpkins are going to melt, I tell you) I need cool drinks. I've been enjoying tall cool Mike's Hard Lemonade all summer because this year they created the Flavors of America variety pack with each flavor representing a different region of the country: lemonade, peach, apple and black cherry. So I grabbed the peach flavor to go with my fresh peaches.
Somewhere between a peach daiquiri and a peachy ice cream float, this drink came out almost like a peachy creamsicle. In other words, dangerously delicious. At least I can see summer out in style. Cheers!

Ingredients (1 Serving)
- 1 1/2 oz. Rum
- 1/2 oz. Simple syrup
- 1/2 oz. Lemon juice
- 4 oz. Vanilla ice cream, divided
- 4 oz. Mike's Hard Lemonade peach flavor, chilled
- 1/2 Fresh peach
Instructions
Add the rum, simple syrup, lemon juice, peach half and 1 oz. of the vanilla ice cream to a blender or small food processor along with one ice cube. Puree until smooth and pour into a chilled glass. Add in 3 more 1 oz. scoops of the ice cream and float the peach lemonade on top.
