Have you been stocking up on Halloween candy for the kids? What about something for the adults? OK, I know we eat the candy, too. Personally, I'm going to steal anything with peanut butter right out of the candy bowl and probably hoard it, but that's another story. Let's talk about when the adults gather and want an adult beverage.

I always try to create a seasonal pumpkin cocktail to serve both for Halloween and Thanksgiving. And when I say pumpkin cocktail, I mean with actual pumpkin puree in it. Big yum and healthy. Or at least that part of the cocktail is healthy. But seriously, pumpkin puree is great for cocktails.

And since we're indulging in candy I offer the option for a skinnier drink with my Sweet 'N Low skinny syrup. I've been making it and keeping a bottle in the fridge so that I can make drinks as sweet as I want without adding extra calories. A little bubbly from seasonal sparkling apple cider and this drink goes down dangerously easy. Cheers!

Sparkling Cider Pumpkin-tini

Recipe for a low calorie vodka cocktail with pumpkin and sparkling apple cider.

Ingredients

  • 2 oz. Vodka
  • 1 oz. Pumpkin puree (canned is fine)
  • 1/2 oz. Lemon juice
  • 1/2 oz. Skinny syrup (or to taste)
  • 4 oz. Unsweetened sparkling cider
  • Pinch of cinnamon
For the Skinny Syrup:
  • 1/2 Cup water
  • 12 Packets Sweet 'N Low

Instructions

  1. To make the syrup, add the sweetener and water to a pot and bring to a boil. Remove from the heat and stir to dissolve the sweetener. Allow to cool for a few minutes.
  2. To make the drink, add the vodka, pumpkin puree, lemon juice, skinny syrup and cinnamon to a blender or small food processor and puree until smooth. Pour into a cocktail glass, add ice cubes and top with the cider.
