What lovely, lovely weather! Winter appears to have cleared out of here in a big hurry and suddenly we have sunshine and 65 degrees with the possibility of 70 degrees later in the week. Oh, the dog and I enjoyed a good long walk yesterday and I was craving a sparkly, lemony drink to celebrate.
I also had some leftover fresh ginger that needed to be used. Normally I make a ginger infused simple syrup but I didn't have enough ginger to make it strong enough. A little bit of freshly grated is plenty strong, though!
About half a teaspoon was right for me but if you like your drinks more fiery, go ahead and grate in some extra ginger. Between the aroma of the ginger and the fresh citrus, I had a completely refreshing cocktail and totally worthy of celebrating the early arrival of spring. Cheers!
