There are just certain flavor combinations that are perfect together in any form and one of my favorites is the pairing of fruit, blue cheese and honey. Most of the time, the form they take for me is in a salad but with the weather warming up and grilling season starting, I decided to play around with new forms.
A tartine is just an open faced sandwich that's usually toasted or, in this case, grilled. And I'm just as happy calling it an appetizer or lunch. But with thoughts of upcoming summer barbecues and lots of outdoor grilling, I love the idea of making a grilled appetizer that looks fancy but is actually ridiculously simple.
My favorite fruit with honey and blue cheese is pears but apples would work fine here as well. And since the pear will get some cooking, I went with the firmer bosc variety. Any blue cheese is fine but I admit to having a serious weakness for Roquefort. Whichever you use, though, don't be afraid to make it a strong blue because the fruit will mellow it out and a generous drizzle of sweet honey will make it perfect.
I pretty much go through buckets of honey because I love it in all kinds of cooking. But in this case it's perfect just drizzled over everything. The hot bread and cheese will warm up the creamy honey and the whole thing will just blend together in one sweet, sharp, creamy, crunchy, perfect bite. Pear, Blue Cheese and Honey Tartine
Prep time: 5 MinCook time: 10 MinTotal time: 15 Min
Recipe for grilled, open faced sandwiches with pears, blue cheese and honey.
Ingredients
- 4 Slices of crusty bread, sliced thin
- 2 Tablespoons canola oil
- 4 oz. Roquefort or other blue cheese, at room temperature
- 1 or 2 Bosc pears (depending on size)
- 4 Tablespoons honey
Instructions
- Brush each slice of bread with the canola oil and layer an even amount of blue cheese on each slice. You can use slices or just crumble it on.
- Peel and core the pears and cut thin slices vertically. Place the slices over the cheese and grill the tartines for about 10 minutes or until the bread is lightly toasted. You can also do this in a grill pan on top of the stove.
- When done, generously drizzle on the honey before serving.
