Smokey Black Bean Burgers

The other day I was looking through my refrigerator and cupboards and pulling out ingredients to make lunch. No particular plan. Just seeing what I have and what I could make with it. My own personal episode of Chopped?

Sadly I needed to go shopping so the vegetable crisper was a little bare except for a bag of shredded carrots and micro arugula left over from another recipe. I guess salad was out although I was more in a sandwich mood anyway. But the sandwich fixings were bare as well.

Happily, the cupboard yielded a can of black beans and I knew immediately there was a bean burger in store for my lunch. I threw in the shredded carrots because they add a great natural sweetness as well as nutrition. But I wanted something to make the burger more special while still keeping it healthy.

One thing I'm always well stocked with is my collection of Nielsen Massey vanillas and flavor extracts. They come in handy for adding flavor without calories to so many dishes. For example, did you know that coffee extract gives black beans a meaty, smokey flavor? Yup. Into the bean mixture it went and out came some amazing burgers. This lunch was a winner and it's going to be repeated soon. Enjoy!

Smokey Black Bean Burgers

Ingredients

  • 1 Cup canned black beans, rinsed and drained
  • 1/2 Small onion, peeled
  • 1 Clove garlic, peeled
  • 1 Egg
  • 1/4 Cup shredded carrots
  • 1/2 Cup breadcrumbs (I used panko)
  • 1 Teaspoon Nielsen-Massey coffee exact
  • Salt and pepper to taste
  • 1 Tablespoon olive oil

Instructions

  1. Pre-heat the oven to 400 degrees.
  2. Add the onion, garlic and black beans to a food processor and pulse until the mixture has broken down. I like it a bit chunky but you can make it as smooth as you like.
  3. Add the mixture to a bowl and stir in the egg, carrots, breadcrumbs, coffee extract, salt and pepper. Form two patties approximately 4" wide by 1" high. Spread the olive oil on a baking sheet lined with parchment and place the burgers on top. Bake for 15 minutes, flip and continue baking for an additional 10 - 15 minutes. You can also fry these in a cast iron pan.

  1. I love the idea of using coffee extract in a veggie burger! I never would've thought of that, but I always feel like veggie burgers need a little extra something to give them a meaty flavor.

  2. I've used their coffee extract in marinade for steak before but never in a bean burger - I need to give that a try because this burger looks legit.
