Oh, has it been a minute since I expressed my undying love of peanut butter? Rest assured my obsession has not waned. And while I fully admit that my preferred method of eating peanut butter is with a spoon, right out of the jar, sometimes I feel compelled to actually make stuff with it.
I recently saw peanut butter treat balls of some kind on a grocery store shelf but the ingredient list seemed needlessly long. Still, it got me thinking that they couldn't be too hard to make myself. A little sweet, a little salt and definitely a whole lot of crunch would make them delicious.
I debated between adding crushed pretzels or crushed peanuts and decided there was no reason to choose and used both. Note that I used an all natural style peanut butter with no added salt or sugar. But if you're using a commercial brand that has both, start with less sugar and salt than I added and keep tasting until you find the balance you like. You might want to be careful with the tasting though because I found it's way too easy to "taste" the whole mixture and have none left to make the crunch balls. Enjoy!

Crunchy Peanut Butter Pretzel Balls

Recipe for crunchy peanut butter balls filled with pretzels and peanuts, topped with melted chocolate.
Ingredients:
- 1/2 Cup crushed pretzels
- 1/4 Cup crushed peanuts
- 1/2 Cup powdered sugar
- 1/2 Cup natural style peanut butter
- 2 Tablespoons milk, as needed
- 1/4 Teaspoon kosher salt, or to taste
- 1/2 Cup semi-sweet chocolate chips, melted
- Sprinkling of sea salt
Instructions:
- Crush the pretzels and peanuts in a food processor or by placing in a plastic bag and crushing with a rolling pin.
- In a large bowl, mix together the crushed pretzels, crushed peanuts, powdered sugar, salt and peanut butter.
- Add one to two tablespoons of the milk, as needed, to form a dough that holds together when scooped.
- Using a 1 oz. scoop, form balls and place on a parchment lined plate. Melt the chocolate chips in the microwave and drizzle over the peanut butter balls.
- Sprinkle the tops with a pinch of sea salt.
