We need to talk about this cocktail because it is so good. I mean, this recipe makes two drinks and I may or may not have had them both. It was just so hard to stop. And the 4th of July theme? Oh, yes, this drink will be on repeat for the holiday.
I was trying to come up with something red, white and blue-ish but I also wanted it to be amazing and not colored that way just for the sake of the colors, if you know what I mean. Problem solved with the cutest rimming sugars ever! Dell Cove Spices makes all kinds of rimming sugars and salts but the red, white and blue stars are new and it was love at first sight for me.
Because these are little more dense than regular rimming sugar, they won't hold with just running the edge of a cut lime around the glass. But a brush of corn syrup, or even simple syrup, holds them and makes your glass instantly festive.
You can totally serve this just as a great frozen cocktail, without the ice cream. But, seriously, why? Because, when the sweet ice cream starts to melt into the tart drink and you get both tastes together it is just summery frozen cocktail heaven. Cheers!

Star Spangled Watermelon Gin Slush

Recipe for a frozen gin cocktail with fresh watermelon and elderflower liqueur.
ingredients:
2 Cups fresh cubed watermelon
4 oz. Gin
2 oz. Elderflower liqueur
1 oz. Lime juice
1 oz. Simple syrup (optional if serving with ice cream)
Pinch of salt
Ice
2 Scoops vanilla ice cream (optional)
For the Rim:
1 Tablespoon corn syrup
instructions:
Pour a couple of tablespoons of the rimming sugar into a shallow bowl. Brush the edges of two tall cocktail glasses (margarita or hurricane glasses will work well) with the corn syrup and roll in the rimming sugar. Place in the freezer for a few minutes to firm up while you make the drink.
Add the watermelon, gin, elderflower liqueur, lime juice and salt to a blender and puree. Fill to the top with ice and puree until all the ice is crushed. Taste and decide if you'd like to stir in the simple syrup.
Pour into the prepared cocktail glasses and freeze for a few minutes or as long as overnight. Top with the scoops of vanilla ice cream before serving.
