Peaches tend to get all the late summer love but I'm just as obsessed with nectarines this year. They're usually piled next to the peaches on display at the market and I find that their sweet aroma draws me in. I've had a steady supply to accompany my morning Greek yogurt but they belong in cocktails as well.
Because it's August and it's hot as hell, I've got my blender working overtime to make frozen drinks. And, in keeping with my summer goals of drinking all the rosé, the frozen drink is usually a frosé. Just the wine, plenty of ice and maybe a touch of flavoring is all it takes to make this great slushy drink. But no frosé was ever harmed by some juicy, sweet nectarines. I also decided to add in a touch of ice cream because...more is more. And I love the pairing of savory herbs with sweet fruit. Thyme is particularly wonderful with nectarines and peaches but basil or mint would work just fine.

Nectarine Frosé Float

Recipe for a frozen rosé cocktail flavored with nectarines, lime juice and ice cream.
ingredients:
- 2 Ripe nectarines, pitted
- 1 Cup rosé wine
- 1 oz. Lime juice
- 2 oz. Vanilla ice cream
- 1 Teaspoon fresh thyme leaves
- Additional vanilla ice cream for serving (optional)

How to cook Nectarine Frosé Float
- Wash the nectarines but no need to peel them. Cut in half, remove the pits and add the flesh to a blender along with the wine, lime juice, thyme and vanilla ice cream. Note that you can add a tiny pinch of salt for extra flavor.
- Fill the blender with ice and blend until the mixture is slushy. Pour into two tall cocktail glasses and top with a scoop of vanilla ice cream and a slice of nectarine.
What could I use in place of the wine?

My first choice would be white grape juice because it will have a similar flavor profile without the alcohol. But you can also use white cranberry juice, apple juice or even sparkling cider.
