A few months ago, I created a neighborhood cooking club and am thrilled at all the new friends I've met and great new foods I've tried. An added side benefit has been that the group includes people who follow lots of different eating plans and I've learned a lot. Newly inspired, I've been trying some new healthier options from the store and I'm sharing my opinions.This alternative crust pizza, from Udi's Gluten Free, includes BBQ flavored chicken, lots of mozzarella and smoked gouda, sweet BBQ sauce and white meat chicken. And the gluten free, grain free crust is made from sweet potatoes!
I enjoy adding vegetables in new ways and have already experimented with alternate crusts so this one was an easy choice. I knew I'd like it just from the wonderful aroma coming from my oven. The sweet potato crust is crispy and tasty and what's not to love about melty cheese! This pizza made a tasty lunch.
Pasta makes a great vegetarian meal option. Evol's ravioli is stuffed with portabella and crimini mushrooms, goat cheese and spinach. Then it's topped with a creamy basil sauce that makes it extra crave-worthy.
Evol basically had me at goat cheese because I love the stuff. And baked into ravioli? Yes, please. I love that it contains nothing artificial, had a great texture and amazing flavor. This was a bowl of comfort food that I could eat on the regular.
This Healthy Choice Power Bowl is a grain free, low carb meal filled with chicken breast, black beans, plenty of vegetables and cauliflower rice. It's topped with cotija cheese and a spicy chili sauce for a delicious kick.
I'm a big fan of cauliflower rice so this one was a no-brainer for me. Vegetables, beans, cheese? All big staples in my diet as well. This is exactly how I like to eat!
This Healthy Choice entree features Indian inspired flavors. Chicken breast, chickpeas, carrots and other vegetables are served over cauliflower rice and topped with a tikka masala sauce.
Although I admit to being a bit of a wimp when it comes to heat, I'm still a huge fan of the flavors and spices used in Indian cuisine. This meal smelled amazing and tasted just as good. Big yes to this one!
