It somehow never stops surprising me that the dead of winter is peek season for some of the most delicious citrus fruit of the year. The market is overflowing with blood oranges, Meyer lemons and grapefruits of every color. I try to taste each different one, especially if it's new to me.
Cara cara oranges look like regular navel oranges from the outside but are red on the inside. Not quite as dark as blood oranges but they definitely have a dark pink hue. Sometimes navel oranges can be a little too acidic for me but the Cara Caras are sweeter and less acidic. And they're crazy delicious.
I ate them, I juice and drank them and then I couldn't resist turning them into margaritas. I zested them before squeezing the juice and then combined the zest with coarse salt for the rim. Strong, sweet, refreshing and so good. You'll definitely want more than one. Cheers!

Cara Cara Orange Margarita

Recipe for a tequila cocktail flavored with fresh lime and cara cara orange juice.
ingredients:
- 4 oz. Tequila
- 4 oz. Cara Cara orange juice
- 2 oz. Lime juice
- 1 oz. Triple sec
- 1/2 oz. Simple syrup, or to taste
- Coarse salt and orange zest for the rims

How to cook Cara Cara Orange Margarita
- Combine the salt and orange zest in a shallow bowl. Run the edge of a cut lime along the rims of the cocktail glasses and dip them into the salt.
- Add the tequila, orange juice, lime juice, triple sec (or Cointreau) and simple syrup to a cocktail shaker. Fill with ice, shake well and pour into the prepared glasses. Serve with a wedge of orange or lime, if desired.
